Think Latkes with a twist! Great for post-work when combo’d with protein!
Potato Pancakes
3 large sweet potatoes- peeled
4 egg whites
10g grated onion
15g rice flour
Pinch of salt
Season as preferred, I like using oregano, garlic, and parsley
Finely grate potatoes. Drain all liquid off. Mix in egg whites, flour, seasoning. In a frying pan (grease with Pam) cook by dropping batter in heaping tablespoons. Flatten to form patties. Cook until golden brown.
